Ricardo Oliveira is a seasoned restaurateur and the visionary owner of Adega Gaucha Brazilian Steakhouse in Orlando, Florida. With over two decades of experience in the hospitality industry, including roles as General Manager at Fogo de Chão in NYC, Wine Director at Smith & Wollensky, and Maitre’d at Churrascaria Plataforma, Ricardo has mastered the art of delivering exceptional dining experiences. As a certified sommelier, he curates an extensive wine list that complements the authentic Brazilian churrasco served at Adega Gaucha, which he founded in August 2021.
His leadership has elevated the restaurant to a top-rated destination, blending the rich traditions of Southern Brazilian Gaucho cuisine with modern steakhouse sophistication. Ricardo’s commitment to quality, hospitality, and community engagement has driven Adega Gaucha’s expansion to Kissimmee and plans for Deerfield Beach, earning accolades like the TripAdvisor Travelers’ Choice Award in 2023 and 2024.
